Parece l\u00f3gico: grasa fuera, grasa dentro. Sin embargo, los hepat\u00f3logos matizan ese razonamiento. La respuesta a qu\u00e9 carga m\u00e1s el h\u00edgado, si el refresco o el chorizo, tiene truco. El h\u00edgado fabrica grasa a partir de los az\u00facares mediante un proceso llamado <strong>lipog\u00e9nesis de novo<\/strong>. Es decir, convierte el az\u00facar en grasa dentro del propio \u00f3rgano.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u00bfQu\u00e9 dice la ciencia sobre la grasa saturada?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Un ensayo doble ciego sobresaliment\u00f3 a personas con muffins id\u00e9nticos en calor\u00edas, pero elaborados con dos grasas distintas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Seg\u00fan el ensayo LIPOGAIN-2, publicado en la revista <em>Journal of Clinical Endocrinology &amp; Metabolism<\/em> en 2019, la grasa saturada <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31369090\/\" target=\"_blank\" rel=\"noreferrer noopener\">aument\u00f3 la grasa hep\u00e1tica un 50%<\/a>. La grasa poliinsaturada, con el mismo aumento de peso, no elev\u00f3 la grasa del h\u00edgado ni las enzimas hep\u00e1ticas.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u00bfY qu\u00e9 pasa con los refrescos?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">La <strong>fructosa<\/strong> de las bebidas azucaradas se metaboliza casi por completo en el h\u00edgado, a diferencia de la glucosa, que reparte su destino por todo el cuerpo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Un ensayo controlado publicado en <em>Journal of Hepatology<\/em> mostr\u00f3 que las bebidas endulzadas con fructosa o sacarosa, pero no con glucosa, aumentan la fabricaci\u00f3n de grasa dentro del h\u00edgado. Adem\u00e1s, el az\u00facar l\u00edquido no sacia, as\u00ed que se suma a las calor\u00edas del d\u00eda.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Entonces, \u00bfqui\u00e9n gana el duelo?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">La respuesta de los hepat\u00f3logos es que no hay un \u00fanico culpable.
